Nita Lou's Cream of Broccoli Soup
Here is another recipe from the book that I would like to try and tweak. I cannot find it online anywhere so I just posted it here and I will make it with some adjustments then I will rewrite it the way I make it. :)
Nita Lou's Cream of Broccoli Soup
1/3 cup plus 1 Tbs Wesson Vegetable oil
3 cups coarsely chopped leeks
3 Tbs all-purpose flour
1 1/2 tsp minced fresh garlic
2 (12 oz) cans evaporated milk
1 1/2 cups homemade chicken stock or canned chicken broth
1/2 tsp garlic salt
1/4 teaspoon ground nutmeg
1/8 tsp pepper
3 Tbs chopped fresh parsley
Salt to taste
in a large saucepan, heat 3 Tbs Wesson Oil. Add broccoli and carrots; saute until tender. Remove vegetables; set aside. Add remaining oil, leeks, flour and garlic; saute until leeks are limp and flour is lightly browned, about 2 minutes, stirring constantly until the flour has dissolved and the mixture is smooth. Do not bring mixture to a boil. Reduce heat to LOW. Add cooked vegetables along with any juices, garlic salt, nutmeg and pepper. Simmer 5 minutes longer, being careful not to bring soup to a boil. Remove the pan from the heat; stir in parsley. Let soup stand 5 minutes before serving. Salt to taste.
Makes 6 servings.
